Rest the meat awhile – Once you have taken the meat off the grill, it is best to keep it aside for a while. It is observed that cutting into meat immediately after it is off the grill results in drier, and tougher meat. It is best to allow some time for the juices to settle in, and the wait will be worth it. A few minutes is all that it takes. The meat will continue to cook even after it is taken off the grill, so setting it aside for a while is definitely a good idea, and the meat will taste a great deal better.
